Lemon bites

Spring is here! My favorite season of the year. Sunshine is back and takes over from the wet, cold, humid winter days. Temperature is getting higher and we are overwhelmed by an inspiring mood. These buttery, zesty, lemon bites are the best treat to welcome spring. Accompanied by a cup of filter coffee, of course.



  • 140 grams melted butter
  • 80 grams sugar
  • 210 grams all-purpose flour
  • 4 eggs
  • 30 grams all-purpose flour
  • 240 grams sugar
  • Juice and zest of 2 lemons


Put the first three ingredients in a bowl and mix them well with your hands. Spread the dough into a 20 x 20 cm square, baking pan and bake in a preheated, at 180° C, oven for 20 minutes.

In the meantime, put the sugar, the flour, the eggs, the lemon juice and zest in a bowl and whisk vividly. You can also use an electric mixer at a moderate power level.

Pour the lemon-egg mixture over the half-baked dough and continue baking for another 20 minutes.

Allow cooling very well, cut into small, square bites, dust with some powdered sugar and serve.
