Apple, cinnamon and oatmeal breakfast

Whether we like it or not, autumn is here. The daylight lasts less every single day. Kids are back to school and everybody seems to try hard catching up with daily routine. This healthy, yummy, warm breakfast is the perfect way to start a busy weekday this fall. You could also enjoy it, though, during weekends, lazily spent, with your family.

Ingredients

  • 1 apple cut into small chunks
  • 1 1/4 teacup oatmeal
  • 2 tablespoons brown sugar
  • 3 tablespoons raisins
  • 1 teaspoon baking powder
  • 1 teaspoon grounded cinnamon
  • 1/2 teaspoon grounded allspice
  • A pinch of salt
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 teacup milk

Put the apple, the sugar, the oatmeal, the raisins, the baking powder, the salt, the spices and the vanilla extract into a bowl and stir.

Add to the above mixture, the milk and the eggs and blend all the ingredients well together.

Pour the mixture into a 20 x 20 cm ovenproof pan and bake it in a preheated, at 170 degrees, oven for 35 minutes.

Serve it hot or cold. You can also sprinkle with some extra cinnamon and powdered sugar.
