Savory zucchini muffins

Those savory zucchini muffins are an excellent choice for kids’ lunch box. You could also enjoy them with a glass of beer on a Sunday night. Try them also with carrots instead of zucchinis or mix both vegetables.


  • 500 grams self-rising flour
  • 250 grams melted butter
  • 4 large eggs
  • 3-4 grated zucchinis
  • 2 teacups grated cheese i.e. parmesan, cheddar, etc
  • 2 teacups milk
  • 1 tablespoon oregano
  • 1 teaspoon salt


Place paper cupcake liners into two, 12-spot muffin pans.

Use a fork and mix all ingredients well in a large bowl.

Divide the mixture in the cupcake liners, already put in the muffin pans, and bake for 21-22 minutes in a preheated oven, at 180 degrees.
