Ingredients
- 500 grams melted butter
- 500 grams grated Kerrygold Regato cheese
- 3 eggs
- 1/2 teaspoon salt
- 1 tablespoon dried parsley
- 700 grams all purpose flour
Mix all the ingredients in a bowl and knead well until you get a soft dough which does not stick on your hands. Divide the dough into three parts, wrap them up and place them in the fridge for 1-2 hours. Roll out the pastry on a surface to about 0,5cm thick. Cut out the dough with a pastry cutter in whichever shape you like.
Bake in a preheated oven, at 180 degrees for 25′-30′ (alternatively, you could sprinkle some extra cheese on top of the biscuits before baking them).
