Savoury cheesy biscuits

Counting down to Christmas, I bake biscuits and cookies all day long as we use to offer them as a gift to teachers, friends and relatives. This year I decided to also make some savoury biscuits to escort a glass of wine and they were an absolute hit. They are aromatic, they are delicious, they are spicy and they are yummy. Try them and they will become your favorites.

Ingredients

  • 500 grams melted butter
  • 500 grams grated Kerrygold Regato cheese
  • 3 eggs
  • 1/2 teaspoon salt
  • 1 tablespoon dried parsley
  • 700 grams all purpose flour

 

Mix all the ingredients in a bowl and knead well until you get a soft dough which does not stick on your hands. Divide the dough into three parts, wrap them up and place them in the fridge for 1-2 hours. Roll out the pastry on a surface to about 0,5cm thick. Cut out the dough with a pastry cutter in whichever shape you like.

Bake in a preheated oven, at 180 degrees for 25′-30′ (alternatively, you could sprinkle some extra cheese on top of the biscuits before baking them).
