Spicy seafood cocktail risotto

When we are fasting, we tend to believe that we will miss our favourite flavours. That is not true though, as there are plenty of fasting, yet yummy ideas on what to cook like this spicy seafood cocktail risotto. If you love spicy dishes, give it a try.

Ingredients

  • 250 grams Risotto rice
  • 700 grams hot water
  • 1 small onion, finely chopped
  • 1 small garlic clove, finely chopped
  • 1/4 teacup olive oil
  • 1 vegetable stock
  • 1 teaspoon dried parsley
  • 1 can of Safcol seafood cocktail
  • Salt, pepper

 

In a large, nonstick skillet , heat the olive oil over medium -high heat and sauté the onion and garlic for 1′ – 2 ‘. Add rice and cook for another 1 ‘.

Add in the skillet the vegetable stock, water, parsley, salt and pepper. Bring to boil and then lower the heat to the minimum, and simmer until the water is absorbed ( if necessary, add some more water).

Add the seafood cocktail with its spicy sauce, mix well and enjoy.
