Ingredients
- 250 grams Risotto rice
- 700 grams hot water
- 1 small onion, finely chopped
- 1 small garlic clove, finely chopped
- 1/4 teacup olive oil
- 1 vegetable stock
- 1 teaspoon dried parsley
- 1 can of Safcol seafood cocktail
- Salt, pepper
In a large, nonstick skillet , heat the olive oil over medium -high heat and sauté the onion and garlic for 1′ – 2 ‘. Add rice and cook for another 1 ‘.
Add in the skillet the vegetable stock, water, parsley, salt and pepper. Bring to boil and then lower the heat to the minimum, and simmer until the water is absorbed ( if necessary, add some more water).
Add the seafood cocktail with its spicy sauce, mix well and enjoy.
