Last week, we had the chance to join a delightful wine pairing at MONO Wine Restaurant which is located downtown Athens. “Pindos” a Greek cooperative of poultry producers, presented the new range of gluten-free cold cuts made of fresh mountain chicken.
In a relaxed atmosphere, among good friends, we enjoyed some great wine & food pairings. Well-known labels of Greek wines produced in the area of Ioannina were matched with the rich flavors of Pindos chicken cold cuts.
Vasso Koutsovoulos, the oenologist who had been responsible for this unique tasteful trip, came up with amazing combinations that satisfied everybody. She also explained why each wine was the perfect match for each cold cut and suggested that the new range of Pindos chicken cold cuts can ideally accompany us when we enjoy our favorite wine.
Suggested combinations:
The light and rich Pindos chicken will be ideally suited to Debina, a fruity, light and acidic wine
Pindos chicken cocktail sausages with the soft and light taste need the freshness, fruity nature and acidity of a white, semi-sparkling wine to emerge, such as White Lemon, Zoinos Winery
Stylish and intense Frankfurt sausages from fresh mountain pasture Pindos are combined with a fruity wine with a pleasant acidity such as Malagousia, Domaine Alfa
Soft and discreetly smoky PINK chicken fillet appears next to a soft rosé with a cool acidity like the 4-6H Agiorgitiko, Gaia Wines
The full and slightly spicy texture of Pindos Chicken Hot Dog requires a full and fruity rosé wine such as L’Esprit du Lac, Kyr-Yannis from the Xinomavro variety.
Exquisite Pindos chicken sausage requires a fruity wine with distinctive tannins characteristically found in an orange wine such as Dr Debina Respect Orange wine, Zoinos Winery
The pleasant spicy taste of Spicy Chicken Salami from Pindos is balanced with a fruity red wine with depth, acidity and velvety tannins such as the Vlachiko, Zoinos Winery
