Vegan cake with concentrated grape syrup and spices

Sometimes you just need to have the right ingredients to get inspired and create a delicious recipe. This recipe flashed into my mind, when a friend of mine gave me this great concentrated grape syrup. I added extra virgin olive oil and some spices and we have enjoyed a great, aromatic, moist cake. Vegans could also give it a try.

Ingredients

  • 250 grams of self-raising flour
  • 1 tsp. baking powder
  • 1 teacup of Gaea concentrated grape syrup (petimezi)
  • 1/2 teacup of Gaea extra virgin olive oil
  • 1 tsp. cinnamon
  • 1/2 tsp. cloves grated
  • 1/2 tsp. allspice grated
  • 1/2 tsp. anise
  • 1 teacup of orange juice
  • Zest of 1 orange
  • Sesame seeds (optional)

 

Put the olive oil and the concentrated grape syrup in the mixer bowl. Mix them at high speed.

Add the self-raising flour, the baking powder, the orange juice and zest and the spices and mix the ingredients well.

Put the mixture in a small cake pan which you have already covered with parchment paper. If desired, sprinkle some sesame on top.

Bake in a preheated, at 170 Celsius degrees, oven for about 50-55 minutes. Insert a toothpick in the center of the cake and if it comes out clean, the cake is ready to be removed from the oven.

Let the cake cool in the pan for 5 minutes, then turn it out onto a wire rack and cool completely.
